A few miscellaneous hints

For coffee flavor in any chocolate recipe, dissolve a tablespoon of instant coffee granules in liquid ingredients. Then follow the rest of the instructions on the recipe.

Use a melon baller to scoop out mixture for truffles, peanut butter balls and etc.

I make very few cut out cookies but have been told that if you put the baking sheets in the fridge for 15-20 minutes then bake they bake up nicer. On parchment paper lined cookie sheets.
