2 15 oz tubs ricotta cheese
3/4 cup sugar
4 eggs
1 teaspoon vanilla
1 (3 3/4 oz) pkg. instant pudding   (milk chocolate or your choice)
1 cup milk
8 oz carton whipped topping

Preheat oven to 350.  Grease and flour a 13X9 pan.  Mix cake mix according to directions. Pour in pan.  Combine the ricotta, sugar, eggs, and vanilla mixing well.  Spoon over unbaked cake.  Bake for 1 hour and let cool.  Mix pudding with milk then fold in whipped topping.  Spread over the cake top.  Cover and store in fridge.

Reeses Peanut Butter Cake

I have been making this cake for quite a few years now and my daughters b'day was Monday and tonight they will come for supper.

Use a chocolate cake mix and bake according to instructions. For the frosting use 1 vanilla can of icing and add about 1 1/2 cups peanut butter-mix together. (if alittle thick just a tad of milk may be added) Frost and then put cut off Reeses on top. This time I just used the minis.

Simple Pineapple Cake

I know I have posted this recipe before but here it is again. My nieces and nephew really like it. My grandpa got this recipe awhile back when grandma was in a nursing home it was published in a newsletter that went out and he always made it. He gave the recipe to me.

1 Angel Food Cake Mix (the one step cake mix)

1 20 oz can crushed pineapple undrained

Mix the cake mix, and crushed pineapple together until well blended. Put into a 9X13 cake pan that has been sprayed. Bake in a 325 oven until done. (mine takes about 35 minutes) Pineapple can be substituted for a large can of mandarin oranges. I rarely frost mine but they wanted frosting so put powder sugar on it. Could use cool whip also.
