Pepperoncini Beef Sandwiches

Use horseradish on croissants for more flavor

3 lb beef roast
1 1/2 cup water
16 oz. jar pepperoncini
36 mini croissants
8 oz pkg shredded mozzarella cheese

Place beef and water in a slow cooker, cook overnight on low heat.  Shred beef and pepperoncinis with juice cook on low heat for 4 to 6 hours.  When ready to serve top each croissant with beef mixture and sprinkle cheese over beef.

Makes about 3 dozen
