Tropical Truffles

8 ounce package cream cheese softened
8 ounce can crushed pineapple, drained
2 1/2 cups sweetened flaked coconut

Beat cream cheese and pineapple together. Cover and refrigerate for 30 minutes. Form into 1" balls; roll in coconut. Refrigerate until ready to serve. Makes 2 dozen.
