This recipe came from my very first Gooseberry Patch Cookbook.
Try half broccoli and half cauliflower for a different version of this casserole. I have also used the bags that have broccoli, cauliflower and carrots in them. I make this for family get togethers and potlucks.
1 regular and 1 large bag of frozen broccoli
2 boxes chicken flavored rice vermicelli mix
2 cans cream of chicken soup
16 ounce pasteurized process cheese spread
Separately prepare broccoli and rice vermicelli mix, according to package directions. Place cooked broccoli in a 4 quart crockpot. Add cream of chicken soup to broccoli and stir. Cut up cheese. Add to mixture in crockpot and stir. Stir in rice vermicelli mix. Allow time in heated crockpot for cheese to melt, and serve. Makes approximately 32 4-ounce servings.
