2 baking potatoes
olive oil
1 cup shredded Colby Jack cheese
6 slices bacon, crisply cooked and crumbled
1/3 cup green onion, sliced
1/4 cup barbecue sauce
Cut unpeeled potatoes into 1/4" thick rounds. brush both sides with oil, arrange in one layer on an ungreased baking sheet. Bake at 450 degrees for 20 minutes, or until tender and golden. Combine cheese, bacon and onion in a small bowl; set aside. Brush baked potato rounds with barbecue sauce, sprinkle with cheese mixture. Bake an additional 3-5 minutes or until cheese is melted. Makes 2 1/12 dozen.
