Christmas In July
Over at the Magical Holiday Home, Christmas in July will start on Thursday!!! Get so many new ideals and such for the holidays. There is only about 6 months till Christmas 2010!

Zucchini Equals
I ran across this several years ago and just found this the other day. Haven't really used it but guess it gives you and ideal.
Zucchini Needed
6 cups sliced 5 3/4 small
7 cups sliced 6 3/4 small
8 cups sliced 7 3/4 small
6 cups sliced 3 1/2 medium
7 cups sliced 4 medium
8 cups sliced 4 1/2 medium
6 cups sliced 2 large
7 cups sliced 2 1/3 large
8 cups sliced 2 1/2 large
Zucchini Needed

Zucchini Struedel
Dough:
4 cups flour
2 cups sugar
1/2 tsp. salt
1 1/2 cups margarine
Filling:
6-8 cups of zucchini peeled, seeded and sliced
2/3 cup lemon juice
1 cup sugar
1/4 tsp. nutmeg
1/2 tsp. cinnamon
Dough
Mix flour sugar, and salt. Cut in the margarine until crumbly.
Filling
Cook zucchini in lemon juice until very tender. Add sugar, nutmeg and cinnamon. Simmer a few minutes then add in 1/2 cup of the dough mixture to thicken. Cool. Press 1/2 of the remaining dough mixture into a 15 X 10 jelly roll pan. Spread cooled zucchini mixture over the dough. Add 1 tsp. of cinnamon to the remaining dough mixture and crumble on top of the zucchini mixture.
Bake at 375 for 30 minutes.
