20-22 new potatoes (When I don't have new potatoes I use potatoes and peel them at times and other times scrub them up real good)
salt, pepper and onion diced small to taste
1 package shredded sharp cheddar cheese
3/4 cup melted butter
1/2 lb. bacon crisply cooked and crumbled up
Cook potatoes and drain. Cool and slice 1/4" thick. In a greased 9x13 pan put half the potatoes in. Season as desired and top with half the bacon and half the cheese. Layer on remaining potatoes, seasonings and top with remaining bacon and cheese. Drizzle with butter. Bake uncovered at 325 degrees until cheese melts and casserole is heated through. Makes 8 to 10 servings
