Chicken Bacon Ranch Potato Bake
I ran across this on facebook the other day and made it. We loved it.
Chicken Bacon Ranch Potato Bake
1/2 cup olive oil
1 tsp. salt
1 ranch dressing mix--dry powder ( I used Italian because I had it)
14 medium potatoes, cubed (We used about 9)
3 chicken breast, cut into bite size pieces (used 2)
2 1/2 cups shredded cheese
1 cup crumbled bacon
1 cup green onions, chopped
1 tsp. black pepper
Preheat over to 500.
In a large bowl combine, olive oil, salt, pepper and ranch dressing (or dressing of choice).
Add the potatoes to the oil mixture and toss well. Spoon potatoes into a 9 X 13 baking dish that has been sprayed. Leave behind as much oil mixture as possible.
Roast potatoes until crispy, about 1 hour, stirring every 15 minutes.
Cut raw chicken into bite size pieces and add to oil mixture and toss well.
In a separate bowl mix the cheese, bacon and onion.
When potatoes are crispy, remove from oven. Lower the temperature to 400.
Top potatoes with raw chicken and the cheese mixture. Bake for another 15-20 minutes. (I did about 30)
Allow to cool for 10 minutes. Serve with sour cream or ranch dressing (or dressing you used) if desired.

Just to share
I went to a church service on Friday night and their saying is:
"God, open my eyes to one person who needs Your love today and give me the courage to share it."
